Owner – Tatsuya Yamazaki
Born in Fukui north of Kyoto, Tatsuya Yamazaki develop a passion for cooking at a tender young age, encouraged by his parents, he enrolled in Tsuji cooking school in Osaka (one of Japans finest teaching schools) after achieving many awards as a student, he was invited to join the kitchen of Mr Oki, head chef, at “Horante restaurant” in Tsukiji Tokyo (also the town known for being the largest fish market in the world).
Mr Oki a highly respected chef invited many times to compete on the Iron chef TV program however his modesty prevents him from doing so. Tatsuya soon became a valued chef under the instruction of Mr. Oki.
He encouraged Tatsuya to gain a wider knowledge of European cuisine, so after a successful 3 year period at “Horante restaurant”, Tatsuya headed for Europe with the blessing of Mr Oki.
Arriving in Barcelona he joined “Bunshichi restaurant” where he quickly learned European cooking. He soon found himself in London at “Benihana restaurant” it became clear during his time in Europe that
his passion lay in Japanese cuisine,
so at the invite of one of Tokyo’s busiest restaurants, he headed back to Nishi Azabu Tokyo to join the team at “Ken’s Dining” a French Japanese restaurant, under the head chef Mr Abe where he was
able to display both his knowledge of Japanese and European cuisine, his flair and passion was noticed by many and it wasn’t long before many international job opportunities came rolling in.
The opportunity presented itself for Tatsuya to move to Australia. He was offered the position as head Sushi chef at “AYA Japanese Restaurant ” in Melbourne, where he excelled and after 3 years he was offered the position of head chef at “Chocolate Budda” one of Melbourne finest restaurants.
Tatsuya now feels he has so much more to offer and has decided to start his own authentic Japanese seafood restaurant, right here in Port Melbourne offering all his years of traditional training under some of the finest chefs in Japan.
